Nutrition Consulting that Makes an

NCS skilled dietitians provide regularly scheduled consulting, with expertise in all areas of nutrition and food service compliance related to state and federal regulations. Our dietitians are also available to provide coverage for another qualified dietitian in case of illness or vacation and on call coverage on holidays or weekends. RD coverage (including holidays and weekends)

NCS dietitians are trained to determine a resident’s nutrition and hydration needs for diagnosis management and weight management. They help identify nutritional risk factors and recommend nutritional interventions, based on each resident’s medical condition, needs, preferences, and goals. They also may write dietary orders within the scope of practice by State law and under the supervision of the delegating physician. Dietitians work closely with the interdisciplinary team, therapists and nursing staff. They have unique qualifications that can impact quality of life while helping to maintain regulatory compliance.

All Nutrition Care Systems RD’s receive continuing education on a regular basis to ensure they stay current on the latest industry trends.

  • Board Certified Specialists in Gerontological Nutrition
  • Board Certified Diabetes Educator
  • Former Federal Surveyor
  • National Food Service Sanitation Instructor.

Regional Managers are also in place to support both the consultant dietitian and the facility as an added level of support, including survey support.

Dietitians help provide oversight on:

Comprehensive Nutrition Assessments

  • Assessing the nutritional needs of residents with focus on identifying the underlying causes of individual nutrition issues and co-morbidities-following regulatory guidelines and current standards of practice focusing on resident-centered care.
  • Developing and evaluating regular and  therapeutic diets, including texture of foods and liquids, to meet the specialized needs of residents.

  • Off-site nutrition assessments of high risk residents such as those receiving enteral or parenteral nutrition, those with Stage 3 and 4 sores as well as dialysis patients – Facility Formulary database available to all on-call RD’s so recommendations align with facility policy.

Education

  • Person centered education programs involving food and nutrition services for all facility staff.

  • Dietary Manager training and precepting for dietary manager in training available

  • In-service training with food service staff including topics on various aspects of food service management, food safety and sanitation, resident nutritional care and
    the concept of “hospitality” – Competency/Inservice manual provided free of charge to assure facility staff are competent. Video in-services also available.

Analysis/Audit

  • Regular reviews of food safety & sanitation – RD’s are trained and certified in Food Safety and Sanitation. Food Sanitation Certification classes available in  addition to IL Food Handler Training.

  • Periodic reviews of food production, meal preparation and meal services – Updated checklists and forms available based on the Critical Element Pathways surveyors use for dining and sanitation.

  • Participation in the quality assurance and performance improvement (QAPI) when food and nutrition services are involved.

  • Pre-Survey Audit and/or On-Site support during survey as requested – Former federal surveyor on staff provides a keen eye to help ensure facilities are survey ready.

  • Analysis of food & labor budgets and education to develop comprehensive controls to help maintain fiscal responsibility, as requested.
